Om Nom Om Nom, a semi-private cooking community


This is completely a product of Julia Childs on Netflix, and a blurry early-morning search for omlette filling. Regardless, I suggest you give it a try. I suggest getting the tastiest potato chips possible, and thicker ones. My favorite for the last several years are Trader Joe's salt and pepper chips, as they're substantial, crunchy, and remind you that pepper has a flavor other than dust.

Potato Chip Omlette

2 eggs
2 tsp butter (or half a tablespoon)
1/3 c potato chips (the bottom crumbles in a bag work best)
Pinch of salt and pepper for the eggs.

Heat a pan. Beat your eggs together with salt and pepper to taste. Melt the butter in the pan until it stops frothing. Pour eggs in pan and swirl in a circular motion,hopefully getting your eggs moving a bit. Pour on the potato chips and continue doing the swirly move. Jerk the pan towards you a few times to (hopefully) get your omlette looking omlette like. Serve! It's really much taster than you would expect (I've had three in the last two days at this point), thought that's probably a combo of too many eggs and the deliciousness of butter.
